Mango glazed pork kebabs with summer fruit salsa Recipe

Serves 2- Lean pork loin or leg steaks
- Mango chutney
- Mango (fresh or tinned)
- Peaches (fresh or tinned)
- Strawberries
- Lime juice and flat leaf parsley
Instructions
Cooking time - approx 12-15 minutes
1. Cut 2 lean pork loin or leg steaks in to 2cm cubes and thread on to metal or pre soaked wooden skewers
2. Pre-heat the grill and cook for 12-15 minutes, turning occasionally
3. During the last 2 minutes of cooking time brush with 30ml mango chutney
To make the salsa:
1. Mix together ½ mango, peeled and chopped (or 100g can mango, drained and sliced), 1 fresh peach, sliced (or 100g can peaches, drained and sliced), 2 strawberries sliced, juice of ½ lime and 15ml flat leaf parsley, chopped
Serve the kebabs with the salsa, fresh salad leaves and garlic bread
