Chicken, vegetable and mozzarella wrap with sweet chilli sauce Recipe


Ingredients

  • 2 x cooked and finely shredded chicken breasts,
  • 2 x shredded peppers
  • 1 x shredded red onion
  • 4 x shredded spring onion
  • ½ a grated carrot, mix all veg together
  • 1-2 handfuls of grated mozzarella
  • 6 x floured tortilla discs
  • a sweet chilli sauce

Instructions

1. begin by heating a large frying pan or wok, add a little olive oil and now begin to soften your veg for 2 mins, stirring all the time, now add a generous amount of sweet chilli sauce and allow to cool for 5-10 minutes
2. now place all 6 floured tortillas on a work surface and add a little sauce, spread it all round the disc with the back of a spoon
3. now add your chicken and veg.  It must be placed a quarter of the way up on the discs roughly 3cm wide.  Now add grated mozzarella on top of your mix
4. roll each disc fairly tight, place on an oven tray (flap side down) and place in your pre-heated oven for approx 10-13 minutes
5. remove from the oven ,slice diagonally and enjoy!
